ABOUT Khira Gaitha (milky rice ball) RECIPE

A typical Odia sweet dish prepare in a special occasion Call Baula Amabasya. It is a delicate and an extremely elevating dessert that's unique to Odisha.

Ingredients Serving: 4

  1. Soaked Rice 1cup
  2. Grated coconuts 1cup
  3. Milk 1 1liter
  4. Cardamom powder 2teaspoonn
  5. Sugar 1cup
  6. Salt to taste
  7. Raisins for garnishing
  8. Bay Leaves 1

Instructions

  1. Soak rice over night.
  2. Mix grated coconuts and rice. Make a paste.
  3. Take 1/2 cup of rice paste and keep aside.
  4. In a deep pan add equal amount of milk according to rice paste.
  5. Add some sugar, salt and cardamom powder and boil it.
  6. Now add the rice and coconut paste to this milk and cook on slow flame for 10 minutes to make a fine dough.
  7. Wait to cool down the dough at room temperature. Knead the dough with ghee to make it softer.
  8. Make small balls out of this dough. Keep aside.
  9. In between in a pan boil 800 millilitre milk and reduce it to 500 millilitre by slow cooking.
  10. Add sugar, bay leaves and cardamom powder to this milk.
  11. Now add rice balls to this milk carefully and boil it for 10 minutes.
  12. Add stored rice paste into the boiling milk and again boil it for 3 to 5 minutes. Stir it properly.
  13. Khira Gaintha is ready now.
  14. Garnish with cashewnuts, raisins and cubes of coconut. Serve hot or cold.
