ABOUT Zafrani Kheer RECIPE

Traditional rice kheer or payesh is given a twist with added coconut and saffron. Coconut gives this a crunchy taste and saffron gives a nice flavour.

Ingredients Serving: 4

  1. gobindobhog or basmati rice 100 grams
  2. milk 500 grams
  3. sugar 150 grams or add more if you want more sweet
  4. cardamom powder 1/2 teaspoon
  5. coconut 1/2 cup
  6. saffron 1/8 teaspoon
  7. cashew nuts 2 tablespoon
  8. pistachios 1 tablespoon
  9. raisins 1 tablespoon

Instructions

  1. Wash and soak rice in 1 cup of water.
  2. Chop nuts.
  3. Boil milk in a heavy bottom saucepan.
  4. When milk starts boiling add soaked rice.
  5. Stir occasionally with a metal spoon.
  6. Soak saffron in a teaspoon of water.
  7. Add grated coconut.
  8. Mix and stir, add raisins.
  9. When rice becomes soft add sugar, mix well.
  10. Add chopped dry fruits.
  11. When kheer gets thickened add saffron.
  12. Add cardamom powder, switch off the gas.
  13. Garnish with more dry fruits.
  14. Serve chilled or when cooled down.
