In West Bengal and in Awadh, festivals or marriages are incomplete without this delicious sweet. If you are a sweet lover then I am sure you are going to like this cham cham recipe.

Ingredients Serving: 5

  1. Cow milk/full fat milk- 1 litre
  2. Lime juice- 3 tablespoon
  3. Water- 3 cup
  4. Sugar- 1 cup
  5. For stuffing:
  6. Mawa/khoya- 250 grams
  7. Sugar- 1/2 cup (powdered)
  8. Almonds- 1/2 cup (chopped)

Instructions

  1. In a vessel add milk. Switch on the flame and give it a boil.
  2. Now switch off the flame and rest for few minutes. Add lemon juice and mix it. Milk has changed to chenna or paneer.
  3. Sieve this chenna or paneer in a muslin or cotton cloth. Rinse this under the flowing water for at least 5 to 7 minutes. So that the smell of lemon juice gets washed away.
  4. Now fold this chenna tightly and squeeze it as much as you can. Hang it for at least 15 minutes.
  5. Take it out from the cloth. Using your palm rub it and make it till you get soft texture. Rub till you see oil of chenna on your palm.
  6. Now make 7 to 8 oval shape balls out of it.
  7. Add water and sugar in a pressure cooker. When the sugar melts add cham cham into it.
  8. Cook for 7 to 9 minutes. Don't over cook it or it will be like rubbery.
  9. Take it out on a plate. Let it cool on a room temperature.
  10. Mix khoya and powdered sugar in a bowl.
  11. Slightly cut it from middle and put some khoya stuffing in it.
  12. Garnish it with chopped almonds and serve chilled.
