ABOUT Bhappa Dohi RECIPE

Bhapa Doi, a delicious baked Yogurt or Hung Curd blended with milk condensed milk and milk which is steamed , popular sweet dish of Bengali cuisine.This Bengali dessert is ideal for summer and special occasions like festivals etc.

Ingredients Serving: 4

  1. Milk ..1 cup
  2. Condensed milk 1 cup
  3. Hung curd 1 cup
  4. Honey flavoured Cream 1/2
  5. (or can use plain cream with your choicest essence)
  6. Lime juice with lemon zest 1 tea spoon
  7. Ghee or butter for greasing 1 tea spoon
  8. Almonds blanched and peeled 2 table spoon
  9. Raisins 15

Instructions

  1. First hang the curd for at least 2 hours to make it thick creamy consistency. And collect all the ingredients .
  2. Grease the baking tin and keep aside
  3. Add condensed milk and yogurt and whisk together till well blended.
  4. Add cream with milk in it give a nice whisk to make all the ingredients creamy and smooth
  5. After cream add milk
  6. Add lime juice with zest
  7. Add almonds, pistachios and raisins with elaichi seeds and mix.
  8. Cover the pan with cling wrap and seal it all around.
  9. Heat sufficient water in a pressure cooker
  10. Put the net plate in the cooker
  11. Put the lid on and steam the cooker, without putting the weight, for about 20 minutes
  12. Take a knife test if the knife comes out clean then the dohi is ready otherwise stem it for another 5 minutes
  13. Take it out of the cooker and set aside to cool to room temperature.
  14. Transfer it in a plate then chill in the refrigerator before cutting into smaller pieces and serving.
