This is one dish I love making on weekends. Bengalis rely on quick to make but very tasty and rich lunch specialities. Here is a part of the lunch that is served often at my home, 'Gurjali fish' in a sweet and sour spicy tamarind gravy.

Heat oil in a pan and fry the fish pieces and potatoes lightly. Keep them aside.
Now add the onion and green chili paste, fry it in the remaining oil gently until you see the oil separate.
Now add in whole green chilies, salt, turmeric, red chili powder, ginger and garlic paste and a little bit of water. Lower the flame and stir until the oil separates and the masalas are cooked well.
Next pour in the tamarind extract, add in the fish pieces. At the same time pour a cup of water, cover it with a lid, let it simmer and cook.
Now add in salt and sugar. Lower the heat and put a lid on the wok. Cook until the potatoes become soft and a thick gravy has formed with the oil leaving the sides.
Serve hot with steamed white rice and loads of love.
