ABOUT Delhi Papdi Chaat... RECIPE

Crispy, flaky beauties blended into a fine chaat that is much Synonymous to North India. It is a lipsmacking one for sure and makes for an excellent snack idea during the monsoons.

Ingredients Serving: 4

  1. FOR THE PAPDI....
  2. Wheat flour 1 cup
  3. All purpose flour 1 cup
  4. Carom seeds 1 tsp
  5. Cumin seeds 1 tsp
  6. Ghee 2 tsp
  7. Water as needed
  8. Salt 1 tsp
  9. Kabuli chana or chickpeas boiled 1 cup
  10. Potato large boiled and cubed
  11. Curd 200 gm
  12. Chat masala 1 tbsp
  13. roasted cumin powder 1 tbsp
  14. Red chilli powder 1 tbsp (optional)
  15. Green chillies chopped 4
  16. Onion finely chopped large 2
  17. Coriander finely chopped a fistful
  18. Mint leaves finely chopped a fistful
  19. Green chutney as desired
  20. Tamarind chutney as desired

Instructions

  1. Make a smooth dough with all the ingredients listed.
  2. Roll out a big roti and cut small discs out of it .
  3. Prick all over with a fork so that they do not puff up while frying .
  4. Make all the papdis in this way and keep aside .
  5. NOW FOR THE ASSEMBLING.......
  6. In a wide serving dish , arrange the papdis at the bottom .
  7. Top it up with the boiled and cubed potatoes.
  8. Pour some curd on top and boiled chickpeas too.
  9. Add onions and green chillies.
  10. Sprinkle chat masala, cumin powder and red chilli powder.
  11. Top up with both the chutneys.
  12. Garnish with coriander and mint leaves.
  13. Serve it right away.
