ABOUT GOLBARI STYLE MUTTON KOSHA RECIPE

Golbari is very old restaurant at Shyambazar in Kolkata.It is famous fir it's spicy mutton kosha.We used to go to weekend for eating out in this very small (with 8/9 accomodation) restaurant in childhood.The charm has remained same nowadays also.

Ingredients Serving: 4

  1. 750 gms Mutton
  2. for marinade-
  3. 3 big sized onion paste
  4. 100 gms raw banana paste
  5. ginger julien 100 gms
  6. garlic cloves chopped 10/12
  7. dried redchilly paste 1 tblspn
  8. Turmeric 1 tspn
  9. mustard oil 1 tblspn
  10. Salt
  11. lime juice (1)
  12. for tempering-
  13. mustard oil 100
  14. Sugar 1 tspn
  15. Finley slice onion 3
  16. Bay leaves 2
  17. paanch foron(five spices mixed)
  18. cardamoms 5/6
  19. cinnamons 3" sticks
  20. cloves 6/7
  21. Turmeric 1 tspn
  22. kashmiri red chilly powder 1 tblspn
  23. pepper powder 1 tspn
  24. cumin powder 1 tspn
  25. Coriander powder 1 tspn
  26. Garam masala powder 1 tblspn
  27. Curd 1 cup
  28. ghee (optional)
  29. Coriander leaves for garnish

Instructions

  1. marinade the mutton for 1 hour
  2. put oil in pressure cooker( u may cook in kadai also,but it will take time)and heat it
  3. throw the marinated mutton into it. it will leaves water. saute it for 10 min apprx to dried it up.
  4. put warm water in it cover with lid. put 4 whishtless and switch off the flame
  5. wait for the pressure cooker open it's own
  6. now take oil in pan heat it.
  7. now put the bay leaves,cardamom,cinnamon,cloves and fives spices. wait till the aroma comes out
  8. then add onions and sugar. fry it well so that it will melt when u cook the gravy
  9. after the onions turns brown add the spices one by one. keep stirring.
  10. now slow down thd flame add curd after one min. stir well so that the curd will mix well
  11. now put the mutton from the cooker. mix it well
  12. add little seasonings if needed
  13. keep stirring tiil boiling starts
  14. keep in full flame for 10 min with lid.
  15. swith off the flame, stir well from bottom to up. wait few min
  16. serve with sprinkled ghee and garnish along with paratha
