Ingredients Serving: 4
Mutton 1kg
Mustard oil 1 cup
Onion large size 6 pieces
Tomato 1 piece large
Garlic 10 cloves
Ginger paste 2 tablespoon
Cumin powder 2 tablespoon
Coriander powder 1 & half tablespoon
Red chilly powder 2 tablespoon
Turmeric powder 1 & half tablespoon
Curd 1/2 cup
Green cardamom 4 pieces
Black cardamom 1 piece
Dalchini [cinnamon stick] - 1
Cloves - 2
Whole red chilly [dried] 3 piece
Bay leaf 2 piece
Mace - 1
Nutmeg powder - 1 pinch
Sugar 1/2 tablespoon
Salt
Ghee 2 tablespoon
Garam masala powder 2 tablespoon
Instructions
First wash the mutton pieces properly.
marinate it with salt..turmeric powder and 3 tablespoon mustard oil
leave it for 2 hours
Take a pan and dry roast the above whole spices And grind it in a mixer
Take a pressure cooker and add some mustard oil in it and then add Bay leaf & whole garam masala
when the spices are starting to crackle then add chopped onion and add some salt.fry the onion on a low flame
when the onion changes it's colour and it will be brown then add the garlic paste..cook it for 2 minutes
Then add the beaten curd and cook it very well.when the beautiful aroma will come then add chopped tomatoes and cook it for 4 mins.
when the tomatoes getting mashy then add ginger paste,cumin powder,turmeric powder,coriander powder and red mirch powder and small amount of water and sugar..cook it for 6 to 7 mins..
after some time add the coarsely grounded dry roasted powder in it and cook for some time
when oil will be separated from masala. .then add the marinated mutton and mix well and cook it in a high flame. .for 20 minutes
then add little amount of water and pressure Cook it for 4 to 5 whistle. ..
open the lead and add some ghee and garam masala powder in it and mix well
shahi mutton kosha is ready to serve
