Ingredients Serving: 8

  1. (For the dough)
  2. All purpose flour ... 2 cups and little more for dusting
  3. Boiled and mashed potato .... 2 tbsps
  4. Oil ............................ 2 tbsps
  5. Sugar ......................... 1 tbsp
  6. Salt ............................. 1 tbsp
  7. Instant dry yeast .......... 2 tsps
  8. Warm water ................ 3/4 cup ( as needed)
  9. (For the filling)
  10. Tahini Paste ... 3 tbsps
  11. Honey ............ 1 tbsp
  12. Salt ................ 1/8 tsp
  13. Roasted sesame seeds ... 3 tbsps
  14. Black pepper .............. 1/4 tsp (freshly crushed)
  15. Sliced scallions / spring onions .... 1/2 cup
  16. Fresh coriander chopped .............. 1/2 cup
  17. For garnishing - Black and white sesame seeds .... 1 tbsp each

Instructions

  1. Take the flour in a large bowl and make a well in the middle. Put yeast and sugar. Add the salt, oil and potato on the side. Knead with warm water adding little by little to make a soft dough.
  2. Knead the dough very well for 6-7 minutes. Place it in a greased bowl for one hour or until it doubles.
  3. Remove the risen dough and knock it gently to remove air bubbles.
  4. Roll it into a rectangle.
  5. Prepare the filling by mixing all the mentioned ingredients together.
  6. Spread the mix on the dough leaving 1 inch edges on all the sides.
  7. Brush little water on the edges. Roll the rectangular dough carefully to make a roll. Pinch the edges with finger tips to seal them well.
  8. Cut into 2 inch rolls using a thread or a sharp knife. Using thread is better as it cuts the shape of the roll perfect and round.
  9. Brush them with water or milk and sprinkle the black and white sesame seeds on top. Place them in a greased tray lined with butter paper and set them aside for an hour to rise. Leave enough space between the rolls as they double in size.
  10. Bake the rolls in a pre-heated oven at 220 C or 350 F for 18 to 20 minutes. Keep a check as the baking time may differ a bit depending on the type and size of the oven.
