The red velvet cake is a moist, spongy, velvety, red coloured melt-in-the-mouth dish which signifies pure heaven and love.It's smooth texture and rich frosting makes it a showstopper.

Ingredients Serving: 6

  1. 1 cup all purpose flour
  2. 1/2 cup wheat flour
  3. 1 cup cream/malai
  4. 2 tbsp sweetened condensed milk
  5. 1 tsp Baking powder
  6. 1/2 tsp baking soda
  7. 2 tsp butter
  8. 1/2 Tsp Vanilla essence
  9. 2 tsp beetroot puree
  10. 1 cup fine sugar
  11. 1 Tbsp Cocoa Powder
  12. 2 tbsp homemade strawberry compote for moistening
  13. 1 cup chopped strawberries
  14. 1 Cup water
  15. For icing
  16. 1 cup fresh cream
  17. 1/2 cup fine sugar
  18. For the garnish/decoration
  19. 8-10 strawberry slices
  20. 1 tsp silver balls

Instructions

  1. Preheat the cooker with a stand inside on a medium flame.
  2. Grease a tin with butter and sprinkle some all purpose flour and keep aside.
  3. Sieve wheat flour, all purpose flour, baking soda ,cocoa powder and baking powder thrice to remove any lumps.
  4. Take one and one fourth cup sugar, malai and butter in a big bowl and blend thoroughly with a hand blender.
  5. Add milkmaid and beat well to get fluffy mixture.
  6. Now add vanilla essence and beetroot puree and mix.
  7. Add the flour and mix slowly by cut and fold method.
  8. Mix very well, till the whole batter is uniform and fluffy.
  9. Pour the cake batter into the prepared cake tin.
  10. Tap the cake tin from the sides so that the batter sets evenly.
  11. Now set the pan in pre-heated cooker and cover with lid, without the whistle.
  12. Set the flame high for 10 mins, then medium for another 10 mins, then low for the last 10 minutes.
  13. Check with a long knife in the centre.
  14. If the knife comes out clean, the cake is perfectly cooked, switch off the flame.
  15. Let the cake cool down to room temperature.
  16. Boil one cup chopped strawberries in one cup of water and half cup of sugar for 10 minutes to get a thick strawberry red coloured compote.
  17. Keep aside to cool down.
  18. For the icing
  19. Beat the cream with sugar and vanilla essence in cool conditions til it becomes fluffy and peaks are formed.
  20. Cut the cake into two parts horizontally.
  21. Spread 2 tsp of strawberry compote on lower half of the cake and then the cream layer.
  22. Cover with the upper half of the cake.
  23. Do the icing with the knife or spatula evenly so that the cake is covered on all sides with cream.
  24. Decorate with strawberry slices and silver balls or anything of your choice which indicates purely love.
  25. Do the plating and serve to your loved ones with love.
