Ingredients Serving: 2

  1. 2 cups semolina and durum wheat bow pasta.
  2. 3 plum tomatoes
  3. 4 to 5 fresh minced garlic cloves
  4. 2 tbsp olive oil
  5. salt as per taste
  6. 2 tbsp chili flakes
  7. 1 tsp pepper powder
  8. 1 tsp Italian seasoning
  9. 1 tsp grated parmesan cheese
  10. 4 cups water to boil
  11. Finely chopped parsley or cilantro

Instructions

  1. Take a deep vessel. Switch on the gas. Put it on medium flame.
  2. Add water, a little salt and 1 tsp olive oil to it.
  3. Bring it to boil.
  4. Add pasta and let it cook till it is "ALDENTE" means it shouldn't be over cooked and mushy rather it should be chewy and cooked well.
  5. I have used the pasta given below.
  6. Drain it under cold running water and keep it aside to stop the further cooking process.
  7. Blend the tomatoes in a mixer and prepare a puree. Sieve it properly by removing residues and seeds.
  8. Now take a pan. Add olive oil, minced garlic, and chili flakes. Saute it well. Make sure to prevent the burning of garlic.
  9. Add prepared tomato puree and seasonings to it.
  10. Now add pasta and give it a quick mix by ensuring it doesn't break.
  11. Garnish it with chopped parsley, grated parmesan cheese and enjoy it with your favorite bread and soup.
