ABOUT Achari Paneer Gravy RECIPE

Achari paneer is a spicy lip smacking north Indian gravy made using paneer flavored with freshly ground hot tangy Achar masala.

Ingredients Serving: 6

  1. For the Achar masala: 4 Dry red chilies
  2. 2 tbsp Coriander seeds
  3. 2 tbsp Fennel seeds
  4. 2 tsp cumin seeds
  5. 1 tsp mustard seeds
  6. 1/2 tsp Fenugreek seeds
  7. For the curry : 500 gm Paneer cubed
  8. 3 medium Tomatoes diced
  9. 1 medium Green Bell pepper diced
  10. 1.5 cups Whisked yogurt
  11. 1 tsp Nigella seeds/Kalonji
  12. 1/2 tsp Hing/Asafoetida
  13. 1 tsp Ginger paste
  14. 1 tsp Green chili paste
  15. 3/4 tsp Turmeric
  16. 1 tsp Kashmiri chilli powder
  17. Salt to taste
  18. 2 tsp sugar

Instructions

  1. Dry roast all the ingredients mentioned in the achar masala section until golden and aromatic. Cool them to room temperature and grind into powder.
  2. Make a puree of tomatoes and bell pepper and set aside.
  3. In a deep non-stick pan, add the oil. Once hot add the nigella seeds, asafoetida saute for few seconds.
  4. Later, stir in the turmeric, ginger paste, green chilli paste and saute for a minute or two until the raw smell disappears.
  5. Next, stir in the red chili powder and pureed tomato bell pepper. Cook on medium heat until oil droplets appear.
  6. Add the whisked yogurt, ground achar masala, sugar and salt. Stir and continue cooking for couple more minutes.
  7. Later stir in the cubed paneer adjust its consistency adding water to your preference. Cover with a lid and cook for 8 to 10 minutes.
  8. Later, we observe oil droplets floating on top and gravy cooked to perfection.
  9. Achari paneer is done and ready to serve now.
  10. The spicy and tangy gravy tastes the best when paired with naan, roti and mild rice dishes.
