Ingredients Serving: 4

  1. Basmati rice 2 cups
  2. Cardamom 3
  3. Eggs 4
  4. Beetroot 2 medium sized
  5. Onion 2
  6. Tomato 1
  7. Coconut grated 2-3 tablespoon
  8. Cloves 3
  9. Cinnamon 1
  10. Coriander seeds 1 tsp
  11. Shah jeera 1 tsp
  12. Poppy seeds 1/2 tsp
  13. Cumin 2 tsp
  14. Chilli powder as required
  15. Ginger 1 tsp
  16. Garlic 1 tsp
  17. Curry leaves few
  18. Salt as required
  19. Oil/ghee as required

Instructions

  1. Cook rice along with cardamom, drain well and keep it aside.
  2. Boil the eggs until done. Remove the egg yolk and chop the egg whites into medium sized pieces.
  3. Finely chop onions, ginger, garlic, tomato and beetroot.
  4. Heat a little oil in a pan and add cinnamon, cloves, shah jeera, poppy seeds, coriander seeds, cumin(1tsp) and fry. Add half of the chopped onions and fry well. Once it changes colour add ginger and garlic and fry. Add tomato and saute for a few minutes. Finally, add coconut and chilli powder and fry for a few minutes.Grind to a fine paste.
  5. Heat oil in a heavy bottomed pan and add 1 tsp cumin seeds and curry leaves.
  6. Add remaining onions and fry till translucent.
  7. Add chopped beetroot and fry for a few minutes. Add a little water and allow it to cook.
  8. Once the beetroot is cooked, add the masala paste and salt and saute well for a few minutes.
  9. Add the chopped egg whites and saute for a minute.
  10. Add the cooked rice and mix gently.
  11. Serve hot.
