ABOUT Veg Dhansak RECIPE

It is a traditional Parsi delicasy prepared with vegetables and lentils.

Ingredients Serving: 4

  1. 1 cup Arhar dal
  2. 1/4th cup green moong dal
  3. 1/4th cup masoor dal
  4. 1 LARGE ONION CHOPPED
  5. 2-3 medium sized tomatoes chopped
  6. 1-2 medium sized brinjals chopped
  7. 1/2 cup chopped kaddu/pumpkin
  8. 1/2 cup chopped lauki/bottle gourd
  9. 2 tbsp fresh fenugreek leaves finely chopped
  10. 2-3 tsp tamarind pulp
  11. 2-3 tbsp Ghee
  12. A pinch of turmeric powder
  13. Salt to taste
  14. FOR THE DHANSAK MASALA
  15. 12-15 garlic cloves
  16. 1 inch ginger
  17. 2 tsp jeera
  18. 1 Cinnamon stick
  19. 1 tbsp Coriander Seeds
  20. 3-4 dry red chili peppers
  21. 5-6 cloves
  22. 3-4 Green Chilies

Instructions

  1. FOR THE DHANSAK MASALA
  2. Grind all the ingredients with some water and make a smooth paste.
  3. FOR THE DHANSAK
  4. Soak the lentils for half an hour and pressure cook it.
  5. Cook all the vegetables except onion,tomatoes and fenugreek leaves.
  6. Heat ghee in a pan and add chopped onions and saute till it turns golden brown in colour.Add fenugreek leaves and saute for a couple of minutes.Add tomatoes and cook until soft.
  7. Add dhansak masala and turmeric powder and saute for 3-4 minutes.
  8. Add the lentils and cooked vegetables.
  9. Add the tamarind pulp and cook for 5-10 minutes or till the raw aroma and taste of tamarind goes.
  10. Serve hot with bread, roti or rice.
