ABOUT Sakkarai(sweet) mango oats pongal RECIPE

Sakkarai(sweet) mango oats pongal is a southindian dessert specially made on pongal festival that is celebrated during harvesting time of paddy. It is made by new rice ,yellow moong daal and jaggery ,to make it more healthy i have used rolled oats and mango puree to give a new twist in taste and flavour.

Ingredients Serving: 4

  1. Yellow moong daal 1 cup
  2. Rolled oats 1 cup
  3. Grated jaggery (fine quality) 1 cup
  4. Mango puree 1cup
  5. Pure Ghee 2 tablespoon
  6. Cardamom powder 1/2 teaspoon
  7. Water 4-5 cups or as per requirement

Instructions

  1. Take a kadhai and fry moong daal on a medium flame continuously stirring untill nice aroma start coming.
  2. Boil this fried moong daal in a cooker with 2-3 cups water untill 2 whistle comes on high flame.
  3. Heat 1 tablespoon ghee in another pan now add in rolled oats and fry on medium flame until nice aroma start coming or color of oats changes slightly.
  4. Add 2 cups of water and cook on high flame for another 4-5 minutes.
  5. Now oats are cooked properly.
  6. add in grated jaggery and mango puree.
  7. Cook for 2-3 minutes stirring occasionally with a spatula to mix all the ingredients well.
  8. When pressure is released completely from the cooker open the lid and take out boiled moong daal .
  9. Now add this boiled moong daal in cooked oats and mango puree.
  10. Now cook for another 2 minutes stirring occasionally with a spatula so that all the ingredients incorporate with each other well.
  11. Add in green cardamom powder to this cooked sweet mango oats pongal .
  12. Take out this ready sweet mango oats pongal in a serving dish.
  13. Now take a tadka pan add 1-2 tablespoon pure ghee and heat to a smoking point reduce the flame and add in cashew and rainsins fry golden brown,switch off the flame.
  14. Pour this fried tadka of cashew and raisins on ready sakkarai( sweet) oats mango pongal.
