Rasmalai with pineapple and coconut

Ingredients Serving: 3

  1. For rasgulla pattie:-full fat milk 1/2 lt,lemon juice 1 tbsp, 1-2 elaichi crushed
  2. (B)For sugar syrup:- sugar 3/4 cup, water 2-1/2 cup, cardamom powder 1/4 tsp (c) For rabbi:-milk 1 lt,sugar 43-4 tbsp,,dedicated coconut-2 tbsp,cardamom power 1/4 tsp, tinned pineapple slice 4-5,few drops pineapple yellow color, almond slices for garnishing

Instructions

  1. (A)Boil milk in a pan-stir continuously.when boiling add lemon juice & stir well. The milk will start curdling.Strain cheena in a muslin cloth.Pour cold water over it so smell of lemon juice will evaporate.leave if for 20-25 minutes.meanwhile prepare rabid and sugar syrup.>(B)in a pan boil milk. stir continuously till becomes thick.Blend desiccated coconut with some milk.add it to rabid.add cardamom power to it.Crush pineapple in moxie to make a smooth paste.€(C)In a small cooker boil sugar with water to make sugar syrup on low flame.(D)Now take cheena in plate. add cardamom powder and with the help of palm knead cheena till becomes soft.Make small balls & flatten into pattie shape.Add all pattie to sugar syrup. After 1whislee cook on low heat for5-7 minutes.cool.
  2. How to serve:blend rabid with pineapple purée & pineapple food color.Squezze pattie from sugar syrup and put in pina colada rabid.Put in freeze for 1 hour.Put in serving bowl. Decorate with. almond slices and serve.
