ABOUT Instant Fresh Turmeric Pickle RECIPE

A healthy and instant pickle made from raw turmeric is perfect accompaniment with paratha or puri. This tangy , mildly spicy and sweet pickle is made from raw turmeric, ginger, green chilies and lemon juice. The pickle has a short shelf life of 2-3 days on refrigeration as it uses just 1 table spoon of oil.

Ingredients Serving: 4

  1. 100 grams Raw Turmeric
  2. 1 inch piece of ginger
  3. 2 green chilies
  4. Juice of 2 lemon
  5. 1 tablespoon jaggery powder
  6. 1 teaspoon mustard seeds
  7. 1 tablespoon oil
  8. Salt to taste

Instructions

  1. Rinse the ginger and turmeric roots in water. Peel them and chop them in julienne.
  2. Finely chop the green chilies. Squeeze out juice from lemon.
  3. Grind the mustard seeds to a coarse powder and keep aside.
  4. In a glass or non reactive bowl place all the ingredients ( turmeric, ginger, green chilies, mustard powder, salt, lemon juice and oil ) . Toss well.
  5. Appetizing instant fresh turmeric pickle is ready to serve. Store in a clean dry glass bottle and refrigerate until use.
