ABOUT #MANGO CHEESECAKE RECIPE

Cheese cake is an english layered dessert. Bottom layer has a crust of cookies and main thickest layer has soft cheese as main ingredient, sweetened with sugar and sometimes flavoured with fruits. Topped with whipped cream ,fruits or fruits sauce.

Ingredients Serving: 6

  1. Digestive biscuits 1+1/2 cup
  2. Cold butter 100 gms
  3. Agar agar strips 1/4 cup
  4. Hung curd 400 gms
  5. Cottage cheese 400 gms
  6. Castor sugar 200 gms
  7. Vanilla extract 1 tsp
  8. Mango puree 1 cup
  9. FOR GLAZE---
  10. Mango puree 1 cup
  11. Sugar 2 tbsp
  12. Water 2 tbsp
  13. Lemon juice 1 tbsp

Instructions

  1. Soak agar agar in 1 cup of water for half an hour. ( Here 1 cup measurement is equal to 250 ml.)
  2. Crush digestive biscuits finely.
  3. Mix butter in crushed biscuits to get crumble consistency.
  4. Take a loose bottom cake tin. Transfer this biscuit mix into cake tin. Spread evenly and press tightly to make base of cheese cake.
  5. Refrigerate the base for half an hour.
  6. Now crumble the cheese.
  7. In a mixer jar add hung curd,crumbled cheese, castor sugar and vanilla extract.
  8. Blend all together to a smooth creamy paste.
  9. Take out this cream cheese mixture to a bowl.
  10. Now heat soaked agar agar with water in a pan. Give it a boil then reduce the heat and cook till agar agar dissolves, stirring in between. It takes around 10 minutes.
  11. When agar agar completely dissolves we get a thick liquid.
  12. While cooking agar agar, heat the mango puree in another pan side by side.
  13. When agar agar dissolves mix it in hot mango puree off the flame.( if there are any lumps in agar agar pass it through a strainer before adding it to mango puree).
  14. Add this mango and agar agar mix to curd and cheese mix. Whisk well.
  15. Pour this mixture over biscuit base.
  16. Refrigerate for half an hour.
  17. Prepare glaze.
  18. In a pan add all four glaze elements.
  19. Heat till sugar dissolves and then let it simmer for 3-4 minutes.
  20. Cool down the glaze.
  21. Pour glaze over cheese cake.
  22. Refrigerate for 3 hours.
  23. Demould carefully. garnish as per choice. Here i used scooped mango.
