ABOUT Beetroot raita RECIPE

A colourful, healthy and tasty raita made from beetroot with a tempering of cumin seeds asafoetida etc gives out a appetising whiff...!!

Ingredients Serving: 6

  1. 1 cup grated beetroot
  2. 1 cup Fresh Curd
  3. Salt to taste
  4. 1/2 tsp sugar ( optional)
  5. For Tempering:
  6. 1 tbsp oil
  7. 2 tsp finely chopped green chillies
  8. 1 tsp cumin seeds
  9. A pinch of asafoetida
  10. 1 tsp urad dal
  11. 1 tsp chana dal
  12. 5 -10 curry leaves
  13. 3 tsp of roughly chopped peanuts
  14. 1/2 tsp mustard seeds
  15. 1 tbsp grated Ginger
  16. 1/4 cup freshly chopped coriander

Instructions

  1. Combine beetroot, curd, salt and sugar mix well and keep aside.
  2. For tempering: Heat oil in a small pan add cumin seeds , mustard seeds , urad dal, chana dal.
  3. When they crackle add asafoetida, green chillies , ginger, curry leaves , peanuts.
  4. Pour this on the raita. Mix well.
  5. Now add coriander leaves.
  6. This can be served immediately or chilled also...
