Ingredients Serving: 3

  1. Aloo - 2 peeled and cubed
  2. Bhindi - 10-15 rings
  3. Oil -11/2 Cup
  4. ChillI powder - ½ tsp 
  5. Coriander powder - ½ tsp 
  6. Cumin powder - ½ tsp 
  7. Pepper powder - ¼ tsp 
  8. Green chilly - 2 chopped 
  9. Curry leaves - 8-10 leaves 
  10. Salt to taste

Instructions

  1. Heat oil in a pan. Add the aloo and fry on medium heat till it is cooked and slightly brown approximately 7-8 mins. Remove them in a bowl. 
  2. Fry the bhindis in the same oil. Add them to the fried aloo. 
  3. Fry the green chillies and curry leaves till crisp and switch off the heat. 
  4. Sprinkle masala powders, Salt to taste in the aloo bhindi and mix well. 
  5. Garnish with fried green chillies and curry leaves.
