Ingredients Serving: 6

  1. Besan - 1 cup
  2. Suji /semolina - 1/4 Cup
  3. Sour curd - 1 cup
  4. Water - 3/4 cup
  5. Turmeric powder - 1/2 tsp
  6. Lemon juice - 1tsp
  7. Oil - 1 tsp
  8. Salt - 1/2 tsp
  9. Fruit salt / Eno - 1tsp
  10. For tadka ; Oil -2tsp
  11. Rai - 1/2 tsp
  12. Kadhi patta - 4-5
  13. Green chillies - 2-3slit
  14. Lemon juice - 1tsp
  15. Sugar - 2 tsp
  16. Chopped coriander - A hand full
  17. Water - 1 cup

Instructions

  1. Mix besan, suji, turmeric, salt, add curd, oil and beat well till smooth paste. Add water and mix it well. Keep aside for few minutes.
  2. Meanwhile boil 2 glasses of water in a cooker or a steamer.
  3. Add fruit salt/eno in the batter mix it and pour this batter immediately in an aluminium tin.
  4. Arrange this tin in cooker/steamer close the lid without whistle.
  5. Steam the batter for 15 minutes.
  6. De-mold once the dhokla is ready. To know this, insert a toothpick in the center. If it comes out clean the dhokla is ready.
  7. Tempering : In a wok add oil splutter rai, kadi patta, slit green chilies, water, sugar, lemon juice and bring to a boil.
  8. Pour this tempering on dhokla. It absorbs all sugary water and become fluffier.
  9. Cut into desired shapes and sizes and serve.
  10. Enjoy ! Healthy tea time snack.
