ABOUT Roasted Sweet Potato With A Greek Style Tzatziki Sauce RECIPE

These roasted potatoes can be eaten with your choice of dip but i love to have them with Tzatziki Sauce. I got inspired from one of my Cooking group member Bejaya Sinha ji.

Ingredients Serving: 2

  1. 4 - Sweet Potatoes
  2. 2 - Garlic cloves
  3. 2 tbsp - Fresh coriander leaves
  4. 1 tbsp - Mint leaves
  5. 1 Cup - Thick curd
  6. 1 - Cucumber
  7. 2 - Lemon
  8. 1/4 tsp - Cumin seeds
  9. 1 tbsp olive oil for saute + 1 tsp olive oil for marination
  10. Salt & Pepper according to the taste

Instructions

  1. For Roasted Sweet Potatoes : Microwave sweet potatoes till soft and cut them into cubes.
  2. Chop the garlic and coriander leaves. Marinade the sweet potato cubes with chopped garlic, coriander leaves, 1 tsp oil and salt pepper for 5 minutes
  3. Heat oil in a small pan. Add cumin seeds and saute. Add marinated cubes and roast them till they become crispy outside. Switch off the flame and squeeze one lemon
  4. For Tzatziki Sauce : Grate the cucumber and squeeze it into the bowl. Add thick curd into it and salt pepper to taste.
  5. Add chopped mint leaves and squeeze 1 lemon. Mix them well. Put into the freezer for 10 minutes or refrigerate for 1 hour.
  6. Serve the roasted sweet potatoes with this delicious sauce.
