This recipe is very good for diabetic people because gram flour gives you energy the whole day. Even without frying these dumplings are very tasty. Use of spinach makes it healthier.

Ingredients Serving: 4

  1. For the kofta / dumplings : Gram flour / besan - 11/2 Cup
  2. Clean and wash Spinach / Palak - 1 bunch
  3. Green chilli, chopped - 3
  4. Chilli powder - 1/2 teaspoon or as per your taste
  5. Turmeric powder - 1/4.teaspoon
  6. Amchoor powder / dry mango powder - 1 teaspoon
  7. Cumin powder - 1/2 teaspoon
  8. Chopped coriander leaves
  9. Water for making dumplings or kofta batter as per requirement
  10. For the dumplings gravy : Oil - 3 table spoon
  11. Cumin seeds - 1/2 teaspoon
  12. Small mustard - 1 teaspoon
  13. Cinnamon stick - 1/2 inch
  14. Bay leaf - 2
  15. Ginger and green chilly paste - 1 tablespoon
  16. Kashmiri red chilli powder - 1/4 tsp
  17. Coriander powder - 1 teaspoon
  18. Cumin powder - 1/2 teaspoon
  19. Turmeric powder - 1/2 teaspoon
  20. Garam masala powder - 1/2 teaspoon
  21. Yogurt - 2 tablespoon
  22. Amchoor powder - 1 teaspoon or to taste
  23. Fried gram flour or corn flour - 1 tablespoon
  24. Tomato, chopped - 1
  25. Tomato puree - 1 1/2 cup

Instructions

  1. Clean and wash palak 3-4 times. Put it in a colander so that all the water drains out. Discard the stems and chop it fine.
  2. Now take a deep bowl add in chopped palak, gram flour, pinch of cooking soda, salt, chopped green chilies,cumin powder, turmeric powder, amchoor powder, coriander leaves, oil and mix all the ingredients with your fingers to make a dumpling dough. Add water to this if you need to otherwise palak/spinach has enough water to make a dumpling dough.
  3. Grease your hands with oil to make tennis ball shape fritters. Take a microwave safe steamer fill water in lower part and keep all the ready fritters in the first part of the steamer. Brush them with little oil.
  4. Cover the lid and microwave them for 3-4 minutes.
  5. While the fritters are getting ready take a frying pan and heat oil to smoking point. Add cinnamon stick, bay leaf, cumin and small mustard, allow to splutter.
  6. Now add turmeric powder, coriander powder,amchoor powder kashmiri red chilli powder, cumin powder fry until raw smell of spices disappears and nice aroma of fried spices start coming.
  7. Add in hung curd and fry for 1 minute under high flame. Now add ginger, green chilli and tomato paste fry for another 2-3 minutes or till raw smell of ginger goes and oil start showing at the sides of the pan.
  8. Now add tomato puree and cook for 2 minutes on high flame or till it start boiling. Add 2 cup hot water and ready steamed dumpling cover and cook for 2-3 minutes on high flame and adjust the salt.
  9. Add enough water because gram flour present in dumplings is going to absorb lot of water.
  10. In a small bowl add 2-3 tablespoon of water and mix 1 table spoon of fried gram flour or corn starch make sure there should not be any lumps. Add this carefully into the gravy and stir quickly with the cooking spoon for 1 minute. Gram flour will make the gravy thick and tasty too.
  11. Cover again and cook until one boil comes. Garnish with garam masala and slit green chilli.
  12. Turn off the gas and serve hot with rice, chapati or naan.
