ABOUT Mexican Bean Fajita RECIPE

A fajita is a tortilla stuffed with a bean filling with salsa and then grilled with cheese.

Ingredients Serving: 2

  1. For the dough : 100 gm - Refined flour (Maida)
  2. 1/4 teaspoon - Salt
  3. 11/2 teaspoon - Butter
  4. Little water to knead the dough
  5. For Bean Filling : 1/2 Cup - Rajma (soaked overnight)
  6. 1/2 cup - tomato, chopped
  7. 1- Onion, sliced
  8. 1/2 teaspoon - Red chili powder
  9. 1/4 teaspoon - Cumin powder
  10. 1 teaspoon - Oil
  11. Salt to taste
  12. Other Filling Ingredients : 4 tablespoon - Processed Cheese
  13. 1 - Onion, sliced
  14. 1 - Small capsicum, sliced
  15. 1 - Tomato, sliced
  16. 1/2 teaspoon - Green chili
  17. 4-6 tablespoon - Green moong sprout
  18. Salt, lemon juice for sprinkling
  19. Tomato Salsa - 1 Cup - Tomato puree
  20. 1 - Small onion, finely chopped
  21. 1/4 teaspoon - Red chili powder
  22. 1/4 teaspoon - Dried oregano
  23. 1/4 teaspoon - Sugar
  24. 1/4 teaspoon - Salt
  25. 1 tablespoon - Oil
  26. 1 - Green chili finely chopped

Instructions

  1. Make the dough with maida and water. With a rolling pin make some rotis and cook on tawa with little butter till brown spots appear. Keep aside.
  2. Pressure cook the beans till soft for the filling.
  3. Add oil in a pan. Add the chopped onion and tomato. Cook for 2 minutes. Add the cooked beans, salt and other spices and cook till the mixture is semi dry, mash the beans coarsely.
  4. For the Salsa, boil the tomatoes for 5 minutes, drain the water and remove the tomato skin and make a paste.
  5. Heat oil in a pan and fry the onion. Add the other ingredients of salsa and cook for 5 minutes.
  6. Assembling the Fajita : Spread some tomato salsa on the roti. Place bean filling, other filling ingredients. Top with cheese and tomato salsa. Fold from both sides to make a roll.
  7. Grill until the cheese melts. Serve hot.
