Ingredients Serving: 4

  1. Boiled Chickpeas 250g
  2. Onion 2 medium
  3. Tomato 3 large
  4. Garlic 7-8 clove
  5. Ginger 1 inch
  6. Green chilly 4-5
  7. Big cardamom 3
  8. Green Cardamom 4-5
  9. Clove 6-7
  10. Cinnamon stick 1 inch
  11. Bay leaves 2
  12. Cumin powder 1/2 teaspoon
  13. Coriander powder 1 tablespoon
  14. Chole masala 1 tablespoon
  15. Red chilly powder 1 teaspoon
  16. Kasuri methi 1 tablespoon
  17. Salt to taste
  18. Sunflower oil
  19. Coriander leaves for garnishing

Instructions

  1. Soak the chickpeas overnight and next day pressure cooks it with big cardamom and salt for 20 minutes on low flame.
  2. Take a deep kadai, add oil, add the whole garam masalas- green cardamom, clove, cinnamon and bay leaves.
  3. Add chopped onions, once it's translucent add ginger and garlic.
  4. Add tomatoes and slitted green chillies, cook for 2 minutes till the tomatoes turn soft.
  5. Add the dry masalas-cumin powder, coriander powder, red chilly powder, chole masala, Kasuri Methi and salt.
  6. Saute all these on medium flame for 5 minutes till the mixture starts releasing oil.
  7. Add some water and cook for another 3-4 minutes with constant stirring.
  8. Add the boiled chickpeas and required amount of water.
  9. Check for salt and simmer this for 10 minutes.
  10. Garnish with fresh chopped coriander leaves and onions.
  11. Serve with puri, Roti, Paratha, Bature or jeera rice.
