ABOUT Ragada patties chat RECIPE

Mumbai’s popular fast food snack prepared with curried dried peas ragda that is spooned over aloo patties/ cutlets along with an assortment of chutneys and garnished with onion, tomatoes, sev and fresh coriander leaves. Also known as aloo tikki chaat in North India, where its prepared without ragda. A plate of ragda patties along with a glass of fresh juice or lassi makes for a filling, wholesome evening meal.

Ingredients Serving: 2

  1. Chopped onions 1/2 cup
  2. Red chilli powder: 1 teaspoon
  3. Tumeric powder: a pinch
  4. Coriander powder– 1/2 tsp
  5. Garam masala powder– 1/2 tsp
  6. Oil : 1 teaspoon
  7. Chopped tomato 2 teaspoons
  8. Fried groundnut 1 teaspoon
  9. Mashed aloo 1/4 cup
  10. Dried green peas 1 teaspoon
  11. Sev 5 teaspoons
  12. Lemon juice 3 teaspoons
  13. Greenchilli pieces finely chopped : 1 teaspoon
  14. Coriander leaf 1 teaspoon

Instructions

  1. Take a bowl, soak yellow peas overnight. In a pressure cooker add yellow peas along with enough water, turmeric powder and oil. Pressure cook for 3 whistles.
  2. Mash it slightly and set aside. In a pan heat oil – add ginger garlic paste, onion pieces, greenchilli pieces, coriander leaves.
  3. Saute until slightly browned, then add mashed peas along with red chilli powder, garam masala powder and coriander powder with required salt. Mix well  and let it boil.
  4. After few mins it will start to become thick and dry, at this stage add little water. Let it boil until it becomes thick and creamy. Garnish with coriander leaves and switch off. Ragada is ready. Now we are adding chat mixture now to ragada
  5. Now add mashed potato paste, groundnut, greenpeas, tomato pieces and lemon juice.
  6. Finally garnish with sev.
