Ingredients Serving: 4

  1. Red Curry Paste: 4-5 dry kashmiri red chillies
  2. 1/2 onion chopped
  3. 8-10 garlic flakes
  4. 1 tsp - chopped ginger
  5. 1 tsp - sugar
  6. 1 stalk lemon grass or rind of 1 lemon
  7. 1 & 1/2 tsp - coriander seeds
  8. 1 tsp - cumin seeds
  9. 6 saboot kali mirch
  10. 1/2 tsp - soya sauce
  11. 1 tbsp - lemon juice
  12. 1 tsp - salt
  13. Other ingredients:
  14. 4-5 baby corns
  15. 1 small carrot
  16. 1/2 cup - mix bell peppers
  17. 1 - potato
  18. 1/2 cup - florets of broccoli or cauliflower
  19. 8-10 basil leaves
  20. 2 cup - ready coconut milk.

Instructions

  1. Microwave red chillies with 1/2 cup water for 2 minutes. Add all the other ingredients of red curry paste and grind to a very fine red paste.
  2. Slice carrots, baby corns, potatoes and colourful bell peppers.
  3. Mix 2 tbsp oil and red curry paste in a microwave proof dish. Microwave for 2 minutes.
  4. Add coconut milk, vegetables & microwave for 6 minutes or till the vegetables are crisp & tender.
  5. Add salt and sugar to taste. Add basil leaves. Microwave for 2 minutes. Serve hot with steamed rice.

lovely was lookin for a good red thai curry recipe..jst a question.. does lemon rind impart same taste as lemongrass? actualy i want to b as close to authentic taste as possible..
