Vegetable oil 1 tablespoon
Ginger garlic paste 1 teaspoon
Thai red curry paste 5-6 Tablespoon
500 ml coconut milk tinned
Palm sugar 1 teaspoon
1-2 dry red chillies
Ginger juliens .6-7
Lemon zest shredded 1 teaspoon
Cooked quinoa left over 200 g
Salt as per your taste
Thai basil leaves 8-9 leaves
Coriander leaves fresh 20 g
Basil leaves
Red green yellow bell pepper shredded 20g each
Cashew nuts pre_Roasted
Corn grains and carrots ( chunks ) frozen 10g each
Frozen beans chopped 10g
Instructions
Let me first show you some of the ingredients here These are Left over Quinoa dalia , ginger .white onions ., coconut milk and garlic pods frozen
Few more ingredients.. Here u can see veggies , thai red curry paste and tinned coconut milk
Let us start preparing the left over quinoa dalia in Thai red Curry... Take vegetable oil and heat it on the medium flame ..Add chopped white onions.
Now add ginger garlic paste and fry till the raw smell goes away
Add coconut milk.and chopped veggies
Add paparikas and red chillies .
Add thai red curry paste and go on stirring it on a low flame .
Add now left over quinoa dalia .
Stir all the ingredients thoroughly ..Adjust the spiciness of the curry and also the consistency of the curry..
Now add thai basil to infuse minty aroma...add lemon zest too ..and palm sugar to balance the tanginess .
Allow it to simmer for sometimes ..you can add little water to adjust its consistency .
Also add roasted cashews to give the nutty aroma.
Allow it to simmer for some more time and your new makeover of ..left over quinoa dalia is ready . Garnish it with coriander leaves and basil leaves ..Also add ginger juliens ..
