ABOUT Chochos y Tostado RECIPE

Chochos is a vegetarian Ecuadorian dish made with lupine beans, onions, tomatoes, cilantro, limes and tomato sauce. It is served with maiz tostado, plantain chips, avocados and hot sauce. Here is my version of it. It's healthy and tasty too.

Ingredients Serving: 4

  1. 1/2 cup soya beans boiled
  2. 1/2 carrot boiled and cut into small pieces
  3. 1/2 beetroot boiled and cut into small pieces
  4. 1/2 onion chopped
  5. 1/2 tomato chopped
  6. 1/2 cucumber cut into small pieces
  7. 1 tbsp coriander leaves chopped
  8. 1/4 tsp lime juice
  9. 1 tbsp ketchup (home made) or store brought
  10. 1/4 cup fresh pineapple crushed in a blender
  11. 1 tbsp toasted corn (fresh corn boiled and toasted on the skillet)
  12. 1/4 tsp raw mango chopped
  13. 1/4 tsp hot sauce
  14. Khakra strips (make masala chapati with out oil, cut into strips and microwaved for 2 minutes)
  15. Ecuadorian hot sauce:
  16. 1 green chillies
  17. Few cilantro leaves including the tender stem
  18. 1 garlic clove
  19. 1 tsp lime juice
  20. 1 tsp onion finely chopped

Instructions

  1. Mix all the ingredients together except for the corn, raw mango, hot sauce and Khakra strips.
  2. Keep it in the fridge for 30 minutes.
  3. While serving garnish with toasted corn, hot sauce, chopped raw mango and khakra strips
  4. For the Ecuadorian hot sauce, combine the green chilli, cilantro, garlic clove and lime juice in the blender.
  5. Add 2 tbsp water and blend well.
  6. Add the chopped onions and salt to taste.
