ABOUT Pasta In Red Wine. RECIPE

Pasta is something that I love dearly and the best part about it is that you have a lot of scope to play around with it. One can make a different type of pasta depending upon the mood and taste. Ever since I made the grilled chicken in red wine, I wanted to try out the red wine pasta. Red wine gives an amazing color to the food in addition to lovely aroma. Also the red wine gives a different sweetish taste to the food. Red wine pasta is very simple to make and tastes amazing.

Ingredients Serving: 5

  1. Penne pasta 500 gm
  2. Red wine 600 ml
  3. Water to boil
  4. Moth bean sprouts 1/2 bowl boiled
  5. Garlic cloves 5 pcs finely chopped
  6. Bell peppers 1/2 pc finely chopped
  7. Spring onions 3 to 4 pcs finely chopped (can also use white onions or red onions)
  8. Fresh parsley 1/2 bowl finely chopped
  9. Salt to taste
  10. Black pepper freshly crushed 1/2 tsp
  11. Butter 3 spoons
  12. Oregano seasoning 1/2 tbsp
  13. Cayenne pepper powder 1/2 tsp

Instructions

  1. Take a deep frying pan and boil the water along with 500 ml of the red wine and some salt. Take water only so as to cover the pasta.
  2. Once the liquid comes to boil, add the pasta and let it boil for about 10 to 12 minutes. The pasta should be al-dante ie should be stiff and not over cooked.
  3. Drain the liquid. The pasta would have got a lovely color and aroma by now.
  4. Heat another frying pan on medium flame. Add the butter.
  5. Saute the chopped onions, chopped garlic, bell peppers and the moth bean spouts just enough to make them soft.
  6. Pour in the balance 100 ml of the red wine and add the salt, black pepper powder and cayenne pepper powder.
  7. Once the liquid comes to boil, put in the drained pasta and cook until the wine is fully soaked into the pasta. The pasta would have got the reddish brown colour by now.
  8. Toss the pasta with a spoon of butter, parsley and oregano.
  9. If you like your pasta with cheese, you can add the cheddar or Parmesan cheese now and toss. I did not add cheese to the pasta as I wanted to get the amazing taste of the red wine.
  10. Serve hot garnished with parsley leaves along with hot garlic breads
