ABOUT Boiled Peanut Salad RECIPE

A healthy, crunchy and an easy-to-make salad prepared from boiled peanuts and veggies. Peanuts add a crunch to any dish, be it in raw form, roasted or boiled.

Ingredients Serving: 4

  1. ½ cup raw peanuts
  2. 5-6 spinach leaves, washed, stem removed and chopped
  3. ½ cucumber, peeled and cut into cubes
  4. ½ carrot, peeled and cut into cubes
  5. ¼ capsicum, chopped
  6. ¼ cup black raisins
  7. ¼ teaspoon black pepper powder
  8. ½ teaspoon chaat masala
  9. 1-2 tablespoon lemon juice
  10. Salt to taste

Instructions

  1. Soak peanuts for 15-20 minutes in a bowl of water with a pinch of salt.
  2. Strain and steam cook the peanuts on high flame for 3 whistles. Then reduce the flame and cook for another 5-7 minutes.
  3. Remove from flame and let the pressure release completely.
  4. Peanuts should have a crunch to them. They should not be completely boiled and soft. Set them aside.
  5. In a wide bowl, combine chopped spinach leaves, carrots, cucumber, capsicum, black raisins and boiled peanuts and mix well.
  6. Add black pepper powder, chaat masala, lemon juice and salt. Toss well and serve.
  7. Enjoy this healthy and crunchy salad.
