ABOUT MANGO- VANILLA YOGHURT VERRINES WITH NUTS & DARK CHOCOLATE RECIPE

I wanted to try yoghurt version of verrines instead of custard. Luckily, I found Vanilla Greek Yoghurt in a supermarket (read its a rarity - you wouldn't find a packet of curd at times and Greek yogurt is quite exotic). So I picked up Vanilla and mango flavored Greek yogurt along with other ingredients. I must tell you - I am quite happy with the results and the texture. Much creamier than the custard milk version.

Ingredients Serving: 4

  1. Vanilla Greek yogurt - 1 cup (After straining).
  2. Sugar - 2 tbsps (adjust based on the sweetness of your mangoes)
  3. Mango Pulp - 1/2 cup (Undiluted)
  4. Nuts- 3 tbsps chopped (pistachios, almonds)
  5. Dark Chocolate- 2 tbsps

Instructions

  1. Line a sieve with a muslin or cheesecloth. Pour yogurt and let it sit for an hour or 2. If you like really thick. Leave it for 5-6 hours.
  2. Using Double boiler method, melt dark chocolate and keep it ready. Alternatively, you can use a microwave to melt dark chocolate.
  3. Take strained yogurt and mix 3 tbsps of mango pulp and keep it aside. Let's get to my favorite part - Assembling. Get your shot glasses ready or even those cutesier jars will work.
  4. Spoon Mango Yoghurt mixture into shot glasses. Just 2 spoons should do to begin with. Gently tap to get rid of air bubbles. Now spoon mango pulp mixture into it. Now add a layer of nuts. Repeat this procedure with these alternating layers
