ABOUT Authentic south lndian flavoured rava ldli RECIPE

A complete food with the goodness of rava and curd, with the richness of cashew, almond, medical properties of curry leaves and mustard. A dish which can be served as breakfast with chutneys or as lunch with sambar as well

Ingredients Serving: 4

  1. Rava/ suji: 2 cup
  2. Dahi: 1.5 cup
  3. Eno fruit salt: 2 tbsp
  4. Salt: 2 tsp
  5. Mustard seeds: 1 tsp
  6. Cashews: 1 tbsp
  7. Almonds: 1 tbsp
  8. Curry leaves: a handful chopped
  9. Soaked arhar dal: 1 tbsp
  10. Soaked channa dal : 1 tbsp
  11. Oil 2 tsp + to Greece the mould

Instructions

  1. Take all the required ingredients at the kitchen counter
  2. Heat oil and add mustard, let it crackle
  3. Add soaked pulses, curry leaves and sauté for a minute
  4. Add chopped dry fruits and sauté till golden
  5. Add rava and sauté on slow till golden
  6. Let it cool now add curd and set it aside for 5 minutes
  7. Add some water to adjust the consistency. Batter should not be too thick or too running
  8. In the meantime time prepare ldli cooker and grease the mould
  9. Add eno and instantly fill the moulds and keep in ldli cooker and cook for 7-8 minutes on high flame
  10. Take the moulds out and let it rest for few minutes
  11. Remove idli and serve hot with tomato sauce or any other chutney of your choice
