ABOUT Baigan bharit RECIPE

Brinjal/ Egg plant roasted on flame and mixed with raw onions

Ingredients Serving: 4

  1. Brinjal / Egg plant one big
  2. Fresh grated coconut 1/2 cup
  3. Onion finely chopped 1/2 cup
  4. Green chillies 2
  5. Fresh Corainder leaves chopped
  6. Salt to taste

Instructions

  1. Apply oil on the brinjal and keep it on the burner with the flame low
  2. Roast the brinjal till the outer skin is completely burnt and the inner flesh is tender.(Check using fork)
  3. Once done Keep the brinjal aside and let it cool down to room temperature
  4. Meanwhile chop onions, green chillies and corainder
  5. Now peal the burnt skin of the brinjal and smash the brinjal using fingers​ or a smasher.
  6. Add the chopped ingredients, tamarind, salt and mix together.
  7. Serve
