Ingredients Serving: 4
For Handva Flour batter:
1 cup - Rice
1/4 cup - Black Gram
1/4 cup - Split Bengal Gram
1/4 cup - Split Red Gram
12 cup - yogurt
For Handva:
2 cups - Handva Flour Batter
1/2 cup - Grated Bottle Gourd
1/2 cup - Chopped Spinach
Fenugreek leaves
1/2 cup - Sprouts
1/2 cup - Pea Paste
2 tsp - Garlic Paste
2 tbsp - Ginger Chilli Paste
1/4 tsp - Turmeric powder
Salt to taste
1/2 tsp - Black pepper Powder
Oil as required
3 to 4 tbsp - wheat flour
2 tsp - Sugar
1/2 tsp - Soda
50 gms - Cheese
1 tsp - Mustard Seeds
1/2 tsp - Asafoetida
1/2 tsp - Sesame Seeds
5 to 6 - Curry Leaves.
For garnishing:
Cheese Slices
Tomato slices
Mint leaves
Sambhar masala
Instructions
For Handva Flour Batter: Soak rice, black gram, split Bengal gram, spilt red gram and grind. Then add yogurt and keep it aside for around six hours till batter ferments.
For Hariyali Handva: In a bowl add handva flour batter, grated bottle gourd, fenugreek leaves, spinach leaves, sprouts, green pea paste, garlic paste, ginger chilli paste, turmeric powder and salt and black pepper powder. Mix well.
In another small bowl pour oil and add 3-4 tbsp of wheat flour. Mix well and add to the above handva mixture.Then add sugar and mix. In a pan heat 2-3 tbsp oil. Add soda to the hanvda mixture and pour the hot oil over it.
Grease the cup moulds and add the batter. Place cubes of cheese between the mixtures and then again layer it with the mixture.
Add tempering of oil, mustard seeds, asafoetida, sesame seeds and curry leaves to be poured on top of the mixture.
Bake for 25- 30 minutes at 200°C.
In some hot oil, add sambhar masala and mix it well. Garnish with cheese slices, tomato sauce, sambar masala mixed with oil and mint leaves.
Healthy Hariyali handva is ready.
