Ingredients Serving: 4

  1. For Handva Flour batter:
  2. 1 cup - Rice
  3. 1/4 cup - Black Gram
  4. 1/4 cup - Split Bengal Gram
  5. 1/4 cup - Split Red Gram
  6. 12 cup - yogurt
  7. For Handva:
  8. 2 cups - Handva Flour Batter
  9. 1/2 cup - Grated Bottle Gourd
  10. 1/2 cup - Chopped Spinach
  11. Fenugreek leaves
  12. 1/2 cup - Sprouts
  13. 1/2 cup - Pea Paste
  14. 2 tsp - Garlic Paste
  15. 2 tbsp - Ginger Chilli Paste
  16. 1/4 tsp - Turmeric powder
  17. Salt to taste
  18. 1/2 tsp - Black pepper Powder
  19. Oil as required
  20. 3 to 4 tbsp - wheat flour
  21. 2 tsp - Sugar
  22. 1/2 tsp - Soda
  23. 50 gms - Cheese
  24. 1 tsp - Mustard Seeds
  25. 1/2 tsp - Asafoetida
  26. 1/2 tsp - Sesame Seeds
  27. 5 to 6 - Curry Leaves.
  28. For garnishing:
  29. Cheese Slices
  30. Tomato slices
  31. Mint leaves
  32. Sambhar masala

Instructions

  1. For Handva Flour Batter: Soak rice, black gram, split Bengal gram, spilt red gram and grind. Then add yogurt and keep it aside for around six hours till batter ferments.
  2. For Hariyali Handva: In a bowl add handva flour batter, grated bottle gourd, fenugreek leaves, spinach leaves, sprouts, green pea paste, garlic paste, ginger chilli paste, turmeric powder and salt and black pepper powder. Mix well. 
  3. In another small bowl pour oil and add 3-4 tbsp of wheat flour. Mix well and add to the above handva mixture.Then add sugar and mix. In a pan heat 2-3 tbsp oil. Add soda to the hanvda mixture and pour the hot oil over it.
  4. Grease the cup moulds and add the batter. Place cubes of cheese between the mixtures and then again layer it with the mixture.
  5. Add tempering of oil, mustard seeds, asafoetida, sesame seeds and curry leaves to be poured on top of the mixture.
  6. Bake for 25- 30 minutes at 200°C.
  7. In some hot oil, add sambhar masala and mix it well. Garnish with cheese slices, tomato sauce, sambar masala mixed with oil and mint leaves.
  8. Healthy Hariyali handva is ready.
