  1. Cookie Dough:
  2. 1/2 cup unsalted butter
  3. ½ cup brown sugar
  4. ¼ cup granulated sugar
  5. 1 large egg
  6. 1/8 cup banana
  7. 1/2 t spoon vanilla essence
  8. 1 cup+ 2 tablespoons all-purpose flour
  9. ½ teaspoon kosher salt
  10. 1 cup semi-sweet chocolate chips
  11. Brownie Batter
  12. : 1 cup unsalted butter
  13. 2 cups semi-sweet chocolate
  14. 1/2 banana mashed
  15. 2 cups granulated sugar
  16. 4 large eggs
  17. 1 teaspoon vanilla essencr
  18. 1 cup unsweetened cocoa powder
  19. 1-1/2 cups all-purpose flour
  20. 1 teaspoon baking powder
  21. ½ teaspoon kosher salt

Instructions

  1. Preheat oven to 350°F. Line a 9x13-inch baking dish with parchment paper and lightly apply oil. Set aside.
  2. Cookie Dough-:
  3. In a large microwave-safe mixing bowl, melt ½ cup (1 stick) butter for about 1 minute or until melted enough to easily whisk
  4. Whisk in brown sugar and granulated sugar. Add egg, vanilla and mashed banana, whisk until well combined.
  5. Stir in flour, salt and baking soda. Fold in chocolate chips.
  6. Form cookie dough into teaspoon sized balls and place on a parchment lined baking sheet. Place in the freezer while preparing the brownie batter or for at least 10 minutes.
  7. Brownie Batter-:
  8. Scrape bowl clean of any cookie dough. Place 1 cup (2 sticks) butter and 2 cups chocolate chips in bowl and microwave for about 2 minutes or until melted enough to whisk smooth.
  9. Whisk melted butter and chocolate chips until smooth. Add sugar and whisk until well combined.
  10. Add eggs, one at a time, whisking after each one. Gently whisk in vanilla, cocoa powder and mashed banana until well incorporated.
  11. Add flour, baking powder and salt and stir with a spoon until a smooth thick batter forms.
  12. Remove the cookie dough balls from the freezer and gently fold all but about 15 of them into the brownie batter.
  13. Spread batter evenly into prepared baking dish. Press the remaining 15 balls of cookie dough evenly throughout the top of the mixture.
  14. Bake for about 35 minutes or until a toothpick inserted in a few spots throughout the middle comes out clean.
  15. Let brookies cool completely in baking dish before lifting parchment paper and slicing into squares
