ABOUT Banana Toffee Roulade! RECIPE

A Roulade is a dish filled of rolled meat or pastry. Roulade's are traditionally found in various European cuisines,the term roulade originates from the French word "rouler,meaning "to roll". Making a rolled cake can be intimidating,but a few steps will ensure a perfectly rolled cake every time. Swapping out Bananas with pumpkin,changing up some of the spices, adding a little bit of toffee sauce to the filling, and changing the name a bit here arouses My Banana Toffee Roulade an apt contribution to the contest and dinner table.

Ingredients Serving: 8

  1. 3/4 cup : All purpose flour
  2. 1/2 tsp : Baking powder
  3. 1/2 tsp : Baking Soda
  4. 1/4 tsp : salt
  5. 1/2 tsp : ground cinnamon
  6. 1/4 tsp : grated Nutmeg
  7. 3 nos : Large eggs (at room temperature)
  8. 1 cup : Castor sugar
  9. 1/2 cup : Mashed Banana
  10. 1/4 cup : Icing sugar (for dusting on towel)
  11. For the filling : 1/2 cup : Heavy whipping cream
  12. 2 tbsp : Toffee sauce
  13. 1/3 cup : Icing sugar

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit. Line a 15x10 inch sheet pan with parchment paper and set aside.
  2. Lay out a clean tea towel either on your counter or any flat working area. Sift the 1/4 cup of icing sugar over it. Set aside, you'll use it later to roll the baked cake in.
  3. In a small bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In a larger bowl, whisk together eggs and sugar until completely combined.Stir in mashed banana. Add in flour mixture and mix until combined.
  5. Spread the batter on the prepared pan and bake until cake is golden and springs back when touched, about 13-15 minutes.
  6. Remove cake from oven and immediately turn cake out onto prepared kitchen towel. Remove parchment and roll cake up pretty tightly.
  7. Let it cool completely over the counter or place in refrigerator for 15 minutes to quicken the process.
  8. This process helps set the cake in the direction you will roll it later and prevents major cracking.
  9. For filling : While cake cools, beat the whipping cream using an electric beater until semi stiff peaks add in icing sugar and toffee sauce. Continue whipping for a minute more and keep ready.
  10. To assemble: Unroll cake and remove it from the towel. Spread filling over cake, leaving half an inch over the sides. Smooth and level the filling, then roll the cake back up in the same direction done previously.
  11. Just before serving, dust top of the roulade with additional icing sugar. Slice using a sharp knife and serve.
