ABOUT Banana Whoopie Pies RECIPE

Whoopie pies are small round cake with a chewy texture, consisting of two flattish halves, sandwiched together with a creamy filling. These are golden-edged banana cookies stuffed with chocolate butter cream frosting.

Ingredients Serving: 6

  1. 2 cups all-purpose flour
  2. 1/2 teaspoon baking powder
  3. 1/2 teaspoon baking soda
  4. 1/2 cup mashed banana
  5. 1/2 teaspoon salt
  6. 1/2 cup hung curd
  7. 1 tsp vinegar
  8. 1/2 cup granulated sugar
  9. 1/2 cup brown sugar
  10. 1 large egg
  11. 1 stick unsalted butter, softened
  12. For chocolate buttercream frosting :
  13. 1 Cup Powered sugar
  14. 1/9 th cup butter or margarine, softened
  15. 2 drops vanilla essence
  16. 30 gms unsweetened chocolate, melted and cooled
  17. 1 to 2 tablespoons milk

Instructions

  1. Preheat oven to 175 degrees.
  2. Line baking sheet with parchment.
  3. Sift flour, baking powder, baking soda, and salt into a bowl. Keep aside.
  4. Combine banana, Vinegar and hung curd in another bowl. Keep aside.
  5. Beat butter and granulated and brown sugars with a mixer on medium-high speed, until pale and creamy,
  6. Add egg and 1/2 teaspoon vanilla, beating until incorporated.
  7. Add banana mixture in 2 additions, alternating with flour mixture.
  8. Transfer batter to a pastry bag fitted with a plain tip.
  9. Pipe batter into rounds on baking sheets, spacing rounds 1 1/2 inches apart.
  10. Bake until edges are golden, about 12 minutes.
  11. Slide parchment, with cookies, onto wire racks. Let cool.
  12. Chocolate Buttercream Frosting for banana whoopie pies :
  13. In medium bowl, beat powdered sugar and butter with spoon or electric mixer on low speed until blended.
  14. Stir in vanilla and chocolate.
  15. Gradually beat in just enough milk to make frosting smooth and spreadable.
  16. If frosting is too thick, beat in more milk, a few drops at a time.
  17. spoon 1 tablespoon buttercream frosting mixture onto the flat sides of half the cookies.
  18. Sandwich with remaining cookies.
  19. Dust with confectioners' sugar, and serve immediately.
