Delicious citrus cake with colourful frosting

Ingredients Serving: 4

  1. 858g all-purpose flour
  2. 530g caster (superfine) sugar
  3. 1 tsp Salt
  4. 6 tsp baking powder
  5. 750 ml milk
  6. 250 ml vegetable oil
  7. 250g unsalted butter, softened
  8. 4 tbsp Greek yogurt (can substitute with sour cream)
  9. 2 tsp vanilla extract
  10. 4 large eggs
  11. zest of 1 orange
  12. Zest of 1 lime
  13. 400g lemon curd
  14. Frosting -
  15. 1kg softened unsalted butter (room temperature)
  16. 1.5 kg soft icing sugar mixture (sifted after its weighed)
  17. 4 tbsp milk (room temperature)
  18. 2 tsp vanilla extract
  19. 3 drops yellow food dye + 1 tbsp lemon curd
  20. 3 drops orange food dye + 1 tbsp lemon curd
  21. 3 drops pink food dye + 1 tbsp lemon curd
  22. 3 drops red food dye + 1 tbsp lemon curd
  23. 3 drops purple food dye + 1 tbsp lemon curd

Instructions

  1. Combine the flour, baking powder and salt in a bowl.
  2. In a separate bowl, beat the butter with an electric mixer until pale and fluffy. Add the sugar and mix until combined. Add the vanilla extract and eggs and beat until combined.
  3. Add the dry ingredients in 2 additions, alternating with the milk. Then add the sprinkles and mix until just combined.
  4. Divide into 2 greased 9-inch round cake pans and bake at 350F for 20-25 minutes, or until fully cooked. Cool completely.
  5. Apply frosting of different colours around the cake starting from the base. Then spread it throughout whole cake.
