Ingredients Serving: 4

  1. Medium size broccoli/cauliflower 1
  2. Ingredients for stuffing – grated paneer 1 Cup
  3. Grated cheese 1/2 cup
  4. Ginger paste 1 tsp
  5. Chopped mint leaves 1 tsp
  6. Chopped green chilli 1 tsp
  7. Mixed spice powder 1 tsp
  8. Ingredients for marination- curd( masca) 1 cup
  9. Red Chili Powder 1 Tsp
  10. Ginger-Garlic paste 1 tsp
  11. Oil 1 tsp
  12. 1 egg
  13. Ingredients for gravy – onions grated 2 medium
  14. Ginger–garlic paste 2 tsp
  15. Tomato puree 1 cup
  16. Chilli powder 2 tsp
  17. Turmeric powder 1 tsp
  18. Coriander –cumin powder 2 tsp
  19. Paste of khaskhas 8-10 kaju 1tbsp
  20. coconut powder 1 tbsp
  21. kessar 1 pinch
  22. Milk 1/2 cup
  23. Bay leaf 2
  24. Spices - (½ tsp. kalonji ½ tsp. shahi zeera 1tsp. cumin 1 tsp kasoori methi )
  25. Oil 1 tbsp
  26. 4 teaspoons kishmish

Instructions

  1. For stuffing- Soak cauliflower in salted water in a deep pan for 5 minutes
  2. After 5 minutes, wash with clean water
  3. Mix all the stuffing ingredients and stuff into broccoli / cauliflower.
  4. Mix all the ingredients for marination and marinate broccoli/cauliflower for 10 minutes. After marinating, bake in an oven at 180 degrees C or tandoor until tender and golden
  5. If oven or tandoor is not available, steam in a cooker
  6. If steaming, shallow fry for 5 minutes in little oil
  7. For Gravy- In a pan, take one tablespoon oil and heat up and add bay leaves, shahi zeera, kalonji & cumin.
  8. Add grated onion into the pan. When onion turns golden, add ginger garlic paste and cook for 3-4 minutes
  9. Add tomato puree, chilli powder, coriander powder, turmeric powder and cook until it leaves oil. Add kaju and khaskhas paste into gravy.
  10. Cook for another 3-4 minutes and add milky kesar , salt, mixed spice powder, marinated masala, into gravy and cook it for 4-5 minutes.
  11. For garnishing , sprinkle kasori methi ,chopped coriander , grated cheeses and serve
