ABOUT Chaler Payes RECIPE

Chaler payes is a famous dessert in Bengali. It is an integral part of any Bengali occasion like birthday, house warming, rice ceremony etc. it is made with aromatic govinda bhog rice , cow milk, and sugar. In winter chaler payes is made with date palm jaggery

Ingredients Serving: 5

  1. Govind bhog rice - 150 gms
  2. Milk- 2.5 litre
  3. Sugar - 1/2 -1cup or according to your taste
  4. Condensed milk - 1/2 cup
  5. Cardamom Powder- 1 tsp
  6. Kaju / cashew nuts - 1 tbsp
  7. Raisin/kishmish- 1 tbsp

Instructions

  1. Wash rice and soak in water for 30-40 mins
  2. Heat a large sauce pan with milk. Once milk starts to boil add soaked rice.
  3. Stir occasionally till rice is cooked well and milk reduces up to 40%
  4. Cook chaler payes on low- medium heat.
  5. Then add sugar, Condensed milk, kaju and kishmish .
  6. Stir till sugar dissolves completely .
  7. Add cardamom powder.stir well to mix.
  8. It will take almost 30-40 mins for the payed to get ready
  9. Turn off the gas. Cool
  10. Serve
