Ingredients Serving: 8

  1. Mutton - 1 and 1/2 kg
  2. Basmati rice -1 and 1/2 kg
  3. Tomatoes - 4
  4. Onions - 6
  5. Garlic paste - 3 tbsp
  6. Ginger paste - 2 tbsp
  7. Garam Masala powder - 2 tsp
  8. Turmeric powder - 1 tsp
  9. Chilli powder - 2 tsp
  10. Whole garam masalas (Cardamom - 4, Cinnamon - 4, Bay leaves - 4, cloves - 4)
  11. Biryani masala - 2 tbsp
  12. Yogurt - 1 cup
  13. Chopped coriander leaves - 2 tbsp
  14. Green Chillies - 2
  15. Pineapple essence - few drops
  16. Saffron milk - 1 tbsp
  17. Salt
  18. ghee
  19. Water

Instructions

  1. Marinade Mutton pieces with Yogurt, Ginger paste, Garlic paste, Chilli powder, Salt and Garam masala powder for 2 hours.
  2. Cut onions in thin pieces.
  3. Cut Tomatoes into small pieces.
  4. Heat oil in pressure cooker and put whole garam masalas.
  5. Fry chopped onions till golden brown in colour. Add chopped tomatoes, coriander leaves and green chillies. Add marinated Mutton pieces. Add biryani masala and some water. cook till Mutton pieces tender. In the pressure cooker cook for 4 whistles and then lower the flame and cook for 10 minutes.
  6. Fry some thin onion pieces till golden in colour.
  7. Wash and drain rice. Cook in the double quantity of water. Cook for just 1 whistle. Cook rice till it semi done. Heat some ghee in thick bottomed and heavy big pan. Put whole garam masala. Put half of cooked Mutton in it. Spread half of cooked rice. Then put remaining Mutton and gravy. Spread remaining rice over Mutton evenly. Sprinkle fried onion slices, chopped coriander leaves, sliced tomatoes, Pineapple essence and saffron milk. Make a hole in middle and put remaining oil of Mutton.
  8. Close the lid of utensil and seal with flour dough. Keep on low flame and give dum for 10 minutes.
  9. After 10 minutes open the lid. Yummy Mutton dum biryani is ready.
