ABOUT Mishti Doi RECIPE

Mishti doi is a fermented sweet doi. This type of yogurt is common in the states of West Bengal and Odisha in India, and in Bangladesh. It is made with milk and sugar/jaggery. It differs from the plain yogurt because of the technique of preparation

Ingredients Serving: 1

  1. 1/2 litre full cream milk
  2. 2 tablespoon curd
  3. 125 gram sugar
  4. 4 to 5 crushed seeds of Cardamoms
  5. few strands of kesar
  6. 1 teaspoon rose or kewra essence

Instructions

  1. boil the milk in a heavy bottom pan on a medium flame till it reduced to half. Stir continuously. Turn off the gas and cool it till it is just luke warm
  2. Put the sugar in another pan and heat over a low flame to dissolve. Allow the sugar to caramelise /brown. Remove from the heat. and add the milk to the caramelised sugar and mix well
  3. When the sugar and milk are thoroughly mixed, add the yoghurt to the mixture and stir gently to mix
  4. Add cardamom seeds, essence and kesar strands per choice
  5. Pour into the desired container and keep in a warm dark place for the Mishti doi to set
  6. the best taste results are achieved by setting the mishti doi in an earthen pot
  7. when the mishti doi has set, keep in the refrigerator for a few hours and serve chilled
