Traditional rabri with a tangy orange twist

Ingredients Serving: 2

  1. Milk 3 cups
  2. 1 orange ( segments )
  3. Sugar 1/2 cup or as per sweetness
  4. Almonds 4-5
  5. Cardamom Powder 1/4 tsp
  6. Saffron 5-6 (soaked in 1tsp milk)
  7. Chopped orange and orange peel for garnishing

Instructions

  1. Firstly soak almonds in water for some time.
  2. Take a pan, I used iron pan, you may use any pan
  3. Boil milk in the pan and separate the upper layer as it appears and stick it to the wall of the pan.
  4. Repeat the process till the milk gets reduced properly or becomes half in quantity.
  5. Stir the milk properly in the whole process. Stir continuously to prevent it from burning.
  6. Now add sugar and cook the milk until the sugar gets dissolved.
  7. Now add chopped almonds, saffron and cardamom powder.
  8. Now turn off the flame and let the rabri come to room temperature.
  9. Separate orange segments and then cut into two pieces and also cut some orange peel for garnishing.
  10. When rabri gets cold, add orange segments and mix properly.
  11. Put in the fridge for some time then garnish it with orange peel and serve.
