ABOUT Eggy Pesarattu.. RECIPE

As the name suggests, it's a healthy green gram dosa with egg. Absolutely divine. It tastes so very yummy. Full of protiens and combining these two protien rich sources makes it an even more marvellous breakfast platter. Indulge in it for a wholesome experience of protien rich dosas.

Ingredients Serving: 4

  1. Whole green gram or sabut moong 1 cup
  2. Raw rice 1/2 cup
  3. Salt to taste
  4. Red chilli flakes 1 tbsp
  5. Coriander leaves a handful
  6. Eggs 6-7 one per dosa
  7. Some chilli flakes and dry parsley for sprinkling on top
  8. Salt a pinch for whisking each egg

Instructions

  1. Make a semi thick batter similar to the normal dosa batter by grinding all the ingredients mentioned to a smooth paste.
  2. Whisk an egg each separately for each dosa with little salt. After the dosa is nearly done, lower the flame and pour the beaten egg on it. Cover and cook for a minute.
  3. Sprinkle some parsley or coriander leaves and mild chilli flakes if serving to the little ones.
  4. For the adults, can use green chillies or spicy chilli flakes too.
  5. Serve hot with any chutney of your choice.
