Spicy eggplant veg cooked in mustard oil with lots of onion and tomatoes. This can be served with tandoori roti and lassi best lunch recepie in summer.

Ingredients Serving: 5

  1. Eggplants 2
  2. Peas half glass
  3. Onions 3
  4. Tomatoes 3
  5. Green chilly 5
  6. Salt
  7. Red chilly powder as to taste
  8. Mustard oil 5 big tsp

Instructions

  1. Take a wok heat mustard oil
  2. Add chopped onion
  3. On side gas stove keep eggplants on fire for roast
  4. Outter cover of these themself unlayered then clean it mash it.
  5. Now in a wok add tomatoes and green chilly along with peas
  6. Cook this tadka very well because it only gives taste to your vegetable.
  7. Add red chilly powder as to taste.
  8. Add cleaned eggplant in it
  9. Mash with spoon so that lumps of egglant are clean and soothe
  10. Cook until it rinse oil seperate
  11. Garnish with Corainder leaves
