Ingredients Serving: 4

  1. 1/2 cup raw pistachio
  2. 2 and 1/2 cup all purpose flour
  3. 1 tsp sugar, 1/2 cup ice water
  4. 1 tsp kosher salt, 1and 1/2 tsp chilli flakes
  5. 1 and 1/2 cup unsalted butter
  6. For Filling,2 garlic cloves chopped
  7. 1 large leek,use only upper white part chopped
  8. 1 and 1/2 cup cheddar cheese
  9. 1/2 cup mozzarella cheese
  10. 5 tsp heavy cream
  11. 1 tsp black pepper powder fresh
  12. 4 tsp fresh chopped dill leaves
  13. 4 small size potato thinly sliced
  14. 1 Egg beaten
  15. olive oil for cooking and drizzling

Instructions

  1. Take pistachio in grinding jar and grind it coarsely.Now in large mixing bowl add all purpose flour,salt and sugar,butter and crushed pistachio and finally add ice water in it and make a dough.
  2. when dough prepare wrap in plastic and chill it at least 30 min.
  3. In other side heat oil in pan add chopped garlic now add leek and cook only softened without colour.when it done transfer in a bowl.
  4. Now mix both cheese,cream,salt and pepper in a bowl and mix well.
  5. Preheat oven at 190*.Now take dough divide in 4 pieces,now roll out a piece with rolling pin on surface,transfer in to a lined baking sheet,spread cheese and cream mixture over dough,leave 1 inch border,now spread dill leaves over the dough,and finally arrange the slice potato.
  6. when all arrange spread one quarter of leek on over now sprinkle salt,black pepper and chilli flakes over it.fold the sides of dough over filling and brush the top with beaten egg.
  7. Like this make remaining galette.
  8. Bake galettes for 30 min on 200*till crust are golden brown in colour,drizzle some olive oil over it and sprinkle some dill leaves,pepper,salt and flakes over it.
