Bobbatlu is an ancient and traditional sweet flat bread of Andhra Pradesh. It is filled with Channa dal and jaggery mix inside and looks like sweet parota. Any festival or celebrations are incomplete without these bobbatlu in andhra pradesh. Its origin was not known exactly, but can be understood that it has been a traditional sweet from many centuries. The recipe of bobbatlu was found in a Sanskrit book MANASOLLASA written in 12th century.

In a bowl, mix maida, a pinch of salt, oil, little water and make it like a soft and sticky dough and let it rest for 1 hour.
Wash and soak channa dal for 1 hour and cook for 3 whistles.
Remove from heat and grind it to a smooth paste.
In a non stick pan , add powdered jaggery and little water along with elachi powder and stir well for 5 minutes.
Now add Channa dal paste to it and cook till it becomes thick paste.
Let it cool for 15 minutes and make small balls ( apply little ghee to your palms)
Now take maida dough and take a small portions of dough and roll it our like a chapatti.
Now place the channa ball in the middle of chapatti and seal it from all sides with the dough.
Remove the extra dough on the top of ball after sealing completely.
Now apply little ghee to your palms and press it gently to form a round shape bobbatlu. We can even use a puri press to get round and even shape
Now heat a tawa and fry bobbatlu on both sides with ghee.
Our yummy bobbatlu are ready to serve.
