Ingredients Serving: 2

  1. Soy Milk / Coconut milk or milk 1 1/2 cups
  2. yoghurt 1/2 cup
  3. Beetroot small 1/2
  4. Avocado small 1/2
  5. Pomegranate 1/4 cup
  6. Vanilla extract 1/2 tsp
  7. Cocoa powder 1 tbsp
  8. Honey 6 tbsp / sugar 5 tsp
  9. Ice cubes 1/2 cup
  10. For coconut cream topping :
  11. Thick coconut cream 2 tbsp
  12. Powdered Sugar 1 Tsp
  13. Vanilla extract 1/2 tsp

Instructions

  1. Blend together pomegranate , avocado and yoghurt for 2 mins
  2. Now add beetroot and milk
  3. Next add sugar , vanilla extract and cocoa powder
  4. Add ice cubes
  5. Blend together for 2 mins or until smooth
  6. Now pour in tall glasses
  7. Now make coconut cream topping
  8. Blend thick coconut cream , sugar and vanilla extract for 3_4 mins
  9. Put this above the smoothie , garnish with chocolate chips

Thanks paramita for sharing. A Alternative in Red velvet category. After baking, Beetroot food coloring in Red velvet cake won't seem odd. But is it ok to make raw beetroot juice in this smoothie ?
