ABOUT Rawas Masala Biryani RECIPE

Rawas the Indian Salmon is a very tasteful and succullent Fish.Made it in birishta curd and tomato masala Flavoured with some saffron and gave the Biryani Rice some flowery colors to chsnge the usual Biryani look.Serve with Onions in vinegar chilly,Fresh haldi in Lime and Tomato onion curd raita .

Ingredients Serving: 4

  1. 8 -10 pieces Fresh Rawas Fish
  2. 500 grams Basmati Tukda Rice
  3. 2 Big onions for Birrishta or dehydrated onions to fry
  4. 3 medium size tomatoes
  5. 1 cup creamy curds
  6. 3 tblspoon Ginger garlic paste
  7. 1 tspn garlic crushed
  8. few curry leaves
  9. Pinch of gud Saffron
  10. 3-4 tblspn Oil to cook
  11. Salt to taste
  12. 1 tblspn kashmiri red chilli powder
  13. 1/2 tspn Turmeric
  14. 1tblspn cummin corriander powder
  15. 1/2 tspn fennel powder or seeds
  16. 1 tblspn dessicated coconut
  17. Pinch of red and green food colors
  18. 1 fresh lime
  19. Corriander and mint to garnish and for Raita

Instructions

  1. Wash fish well apply little salt ginger garlic. Also mix red chilli powder crushed garlic with sum lime and apply to the fish pieces .Keep aside
  2. Soak Rice 5-7minutes and boil with some salt cool and keep aside
  3. Heat oil in a pan and fry dehydrated onions into Birrishta fry,remove from pan quickly to avoid burning (as dehydrated onions get done soon
  4. In a pot heat oil to splutter curry leaves , garlic crush Saute
  5. Now to this add salt ,turmeric ,tomato pureed and all spices
  6. On the other hand in the birrista oil left saute the Fish marinade turning lightly
  7. Add the prepared masala to the fish marinade placing sum masala as a layer then fish pieces and topping with the rest of the masala
  8. Sprinkle on this the dessicated coconut
  9. Now divide the rice in three portions and heat in microoven
  10. Plating the rice --add the red, green colors and pinch of Saffron mixed in a tblspoon of water on each portion of rice and mix lightly
  11. After placing 3coloured Rice one after the other on one end place the Fish masala lightly mixed
  12. Serve as is with tomato onion raita raw haldi achar and vinegar onion chilly
